Sweet Potato Chili
It has been cold and snowy here in Chicago the past few days, making it the perfect time for Sweet Potato Chili!
The first time I came across Sweet Potato Chili was a few years ago when Julian and I were doing Whole30. Since then, it has become a regular in our dinner line up. I’ve tried various different recipes, taking parts I liked from each and eventually landed on the one I’m sharing with you today.
Ingredients:
1-2lbs of ground turkey
2 large sweet potatoes (peeled + diced)
1 green pepper (diced)
1/2 red onion (diced)
3 cans of diced tomatoes (14.5oz)
1-2 cans of tomato sauce (14.5oz)
2-3 tbsp of chili powder
2 tsp of minced garlic
2 tsp of salt
1/2 tsp of oregano
I generally start by peeling and dicing up the sweet potatoes, followed by the green pepper and red onion. Once those are prepped, I move on to the meat. I like to cook the turkey meat on the stove before putting it in the crock pot, so I can drain out any fat. However, you could also just put the meat in with the rest of the ingredients. Once the meat is done, I put all of the ingredients into the crock pot, set to low and let the crock pot do the rest over the next 6-7 hours!
What I like about this recipe is that it is not exact. You can tweak it as you make it, based on what ingredients you have or what you like. This also makes a large batch. When I make it for the two of us, we will have plenty for leftovers throughout the week. It’s perfect to make ahead of time when you know you will be busy over the next few days. Enjoy!
