Gluten-Free Cinnamon French Toast
Breakfast for me is usually very simple. My go to is 2 scrambled eggs, shredded hash browns or fried potatoes and 2 strips of bacon. But, on mornings when I’m wanting to spice up the most important meal of the day, Cinnamon French Toast is the special.
What’s great about this recipe is that it can be made with regular or gluten-free bread. Having celiac disease, I use Trader Joe’s gluten-free cinnamon raisin bread, but Julie can vouch that gluten-free and regular are both delicious. After you chose your bread, you’ll want to gather the following ingredients. The measurements below serve roughly 4-6, but you can adjust accordingly as needed. If it is just Julie and I, we usually half it.
Ingredients:
3 cups of milk or almond milk
3 eggs
3 tablespoons of sugar
3 teaspoons of cinnamon
2 teaspoons of vanilla
Zest of 1-2 oranges
Mix milk, eggs, sugar, cinnamon and vanilla. After fully mixing, zest an orange or two over mixture. You’re then ready to dunk the bread in the mix.
I recommend using a large pan that can cook up to 3-4 pieces of bread at a time, but you could also use a griddle. Rather than use non-stick spray, melt butter around the pan. After getting to medium heat, place your dipped bread on the pan and cook for about 5 minutes. Timing may vary depending on how soft or crispy you like your toast. I prefer crispy but you can’t go wrong whichever way you chose.
After platting, now for Julie’s favorite part, the toppings! We often use strawberries, chocolate chips and/or powdered sugar. Drizzle some syrup on top and breakfast is served. As much as I would like to take credit for this recipe, we originally found it on Cotton Stem.
